A restaurant in my home town serves an appetizer like this and it’s been a favorite of mine for years. If I go to The Little Village, I have to get this dip. It combines many of my favorite things – roasted red peppers and garlic, hot goat cheese and crusty french bread. In fact, it’s so charming, if I had only those 4 ingredients I’m sure I could be content forever.
Not that I’d want to find out or anything…
Baked Goat Cheese & Pepper Dip – 2-4 servings

4 oz goat cheese
-
6 cloves roasted garlic *depending on preference
-
1/2 cup roasted red peppers, cut into 1″ pieces
-
2-3 Tbsp olive oil
-
baguette for serving
Pre-heat oven to 375°.
Place goat cheese in a small baking dish.
Surround the goat cheese with garlic cloves, red peppers and olive oil.
Bake for about 15 minutes, until hot and bubbly.
Serve with baguette slices.
Additional Topping Ideas: capers, chopped kalamata olives, crispy prosciutto

I was expecting Pho based on your tweets! I need a good Pho recipe for the BF. This, however, is a pleasant surprise. I love goat cheese. I think I could live off of it. So tart and creamy. I’m sending this to my sister for her housewarming. It looks delicious.

Haha, I know! I did get my pho fix last night. And it was glorious! 🙂 Food & Wine sent me this pho recipe which sounds pretty good…it just seems to take a long time and requires some interesting ingredients but I will try once I have a weekend at home!
