Cheesy Avocado Toast with a Fried Egg

I just have to share my newest breakfast obsession with you guys.

It’s not even really a recipe, per say…but it is oh SO good and you definitely need to make it.  Simple food really is the best, isn’t it?

The premise is a simple one, lightly toasted bread (or broiled if I’m at home and too lazy to get the toaster out) is topped with avocado slices and thinly sliced cheese (my favorite is pepper jack) and then broiled until the cheese is golden brown. Then top the toast with preferably, a runny egg. De.Vour.

If I’m at work, I’ll bring a fully cooked egg and then put the components together once I’m ready for breakfast. (But there’s no real plate, golden brown cheese, or runny egg.) It’s still good and definitely still satisfying, but not quite the same.

This toast also makes a delicious lunch or simple dinner if you just can’t fathom such a savory meal first thing in the morning. Anytime of the day, just make sure you eat this soon!

Cheesy Avocado Toast with a Fried Egg

Ingredients

Scale
  • 2 slices bread (sprouted, whole grain, brown rice)
  • 1 small avocado, thinly sliced
  • 2 oz jalapeno jack cheese, thinly sliced
  • 2 fried eggs


Instructions

  1. Turn broiler on high.
  2. Lightly toast bread. (If using broiler, be careful!)
  3. Top bread with sliced avocado and cheese.
  4. Broil until golden brown, watching carefully.
  5. While toast is in the broiler, fry eggs.
  6. Top toast with fried egg.

    Love this!! I do something similar with Ezekiel English muffins, avocado, tomato, turkey bacon and egg whites! Yum!

      Discovered the creamy, simple perfection of avocado toast 2 months ago. I have eaten each morning for breakfast, and most week nights, for dinner. You don’t feel full and bloated after eating.
      The trick to perfection is simple…prep.
      1-Mash up that avocado on a paper plate, cutting board, even on the plate you will eat off of.
      Mash, leaving chunks. Heavily pepper it, many people enjoy dry pepper flakes or hot sauce at this point. Bit of flaky sea salt if possible.
      2- scramble you eggs. Ratio is up to you. I use one whole avocado with 3 large eggs, and 2 sliced pieces
      rustic pane bread, equals 2 1/2 regular sandwich bread.
      Get out the butter, a spreader, a spatula, u r ready!
      Heat the skillet, pop down toast, u need it toasted med-dark, for the crunchy texture. Plop eggs in pan, scramble up those soft plump curds, when almost dry, remove. Toss some shredded cheese on it if you have some, 2-3 T. Makes it even more succulent. Season with salt and pepper, toast comes out, lightly butter, mash avocado onto it, top with egg. More hot sauce as desired, or bacon crumbles, onion, etc…
      The decadence is the custard on the avocado stew, laying on crunchy toast. Sea salt flakes make it outrageous. Cut in slices, and enjoy.

    One of my favorite meals ever! Eggs are my go-to for lunch… I bring a couple to work, crack ’em, pop ’em in the micro and then sandwich ’em up 🙂
