No. You really don’t but I’m going to tell you anyway. Because that is what friends are for.
The first few weeks after Eden arrived, the only time I left the house was for a trip to the grocery store. We live about two blocks away from Trader Joe’s so in between feedings, I could walk over and potentially be by myself for like, 30 minutes.
And because I’m there a few times a week (really, it’s too much) I notice the minute there is a new item! So the frozen jerk chicken caught my eye immediately. I love jerk chicken but am always scared off by the super-long ingredient lists that go along with the traditional dish. This turned out to be a really easy way to enjoy it.
Paired with the classic rice & beans side – made extra delicious with coconut milk. It’s such a satisfying meal, and includes everything you need to make a well-balanced one.
So here are the details! Everything comes together in about 30 minutes.
Ingredient List: grilled jerk chicken thigh skewers, mango jicama slaw, can of coconut milk, can of red kidney beans, rice, lime
Chicken Skewers: Follow package instructions, we grilled them on a gas grill.
Coconut Rice & Beans: Combine rinsed and drained beans and 1 cup rice, using can of coconut milk and 3/4 cup water as liquid. Prepare as directed. Season with salt and pepper if necessary.
Mango Jicama Slaw: Toss together as instructed.
