This is such a special salad! For a few reasons: it’s really easy, it’s really delicious, and it’s the specialty of a dear friend in LA!

I’ve wanted to share this easy grilled flank steak salad recipe with you for so long. The memory of it is SO California because that’s where I had it (in the most picturesque way) but the style of this sort of meal is also SO California. Simple, fresh, and best eaten outdoors.

How to make Easy Grilled Flank Steak Salad with Arugula:

This recipe is SO easy, which is a big part of it’s appeal. All you need to do is make a quick marinade for the flank steak and make a quick vinaigrette dressing for the salad. If you buy your arugula washed like I do, all you need to do is toss the salad with the dressing and top with sliced the easy grilled flank steak. DONE!

What to serve with Easy Grilled Flank Steak Salad with Arugula?

In order to keep this meal really simple, I like to keep the side really simple in the form of grilled bread. The best way to make grilled bread is to brush it with olive oil (don’t be bashful), grill until toasty, and sprinkle with a bit of finishing salt like maldon. (affiliate)

You’ve got protein, vegetables, carbs, and flavor. That’s all my meals need!

How to Cook Easy Grilled Flank Steak Salad with Arugula:

Cooking flank steak on the grill is pretty simple to do! If you want a medium rare steak, it will take about 3-5 minutes per side, or you can cook it to about 130 degrees. As I mentioned in my grilled chicken drumsticks post, I do like to use a meat thermometer when grilling meats so that you don’t overcook things. After you remove the steak from the grill, let it rest for about 10 minutes, and then slice into thin slices against the grain.

Easy Grilled Flank Steak Salad with Arugula requires a quick marinade, a quick dressing, a quick sear on the grill, and a quick toss of arugula! It’s perfect for entertaining and SO easy.


Ingredients

Scale
  • 6 Tbsp. olive oil, divided
  • 1 tsp. Worcestershire sauce
  • 1 tsp. dried minced onion or onion powder
  • 1 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 16 oz. flank steak
  • 2 Tbsp. red wine vinegar
  • 1 tsp. dijon mustard
  • 1/2 lemon (1 Tbsp. lemon juice)
  • 7 oz. bag arugula salad
  • 8 oz. loaf bread

Instructions

  1. Make steak marinade: add 3 Tbsp. olive oil,ย Worcestershire sauce, dried onion, garlic powder, salt, and pepper to a ziploc bag, Squeeze the bag a bit to mix and then add steak in. Refrigerate if marinating for a few hours, or leave out if grilling right away.
  2. Make salad dressing:ย in a small jar, add remaining 3 Tbsp. olive oil, red wine vinegar, lemon juice, dijon, and a pinch of salt and pepper.
  3. Heat grill over medium-high heat. Grill flank steak for about 4-5 minutes per side, or until the internal temperature reaches 130-135 degrees F. Grill bread for about 2-3 minutes per side, or until golden brown. Let steak rest for 5-10 minutes and then cut into thin slices, against the grain.
  4. Toss arugula with salad dressing and top with steak slices. Serve with grilled bread, olive oil for bread dipping, and flaky salt and freshly ground pepper for the steak and salad.

Notes

  • Get your kids involved. They can: stir together marinade, shake together salad dressing, brush bread with olive oil.
