Crockpot Cheesy Potatoes

These crockpot cheesy potatoes are the ultimate comfort food side dish that’s always a crowd-pleaser. Made with tender potatoes, a creamy sauce, and cheesy layers throughout, it’s pure comfort in every bite. And so easy to cook in the slow cooker!

The crockpot version is made with the same simple ingredients as my cheesy potato casserole, but instead of baking it, we’re letting the slow cooker do the work and saving oven space at the same time. If you want something a bit more fancy, try my ham and potatoes au gratin.

They are the perfect side dish for holiday meals like ham, turkey, or beef but can also easily be made for a more casual weeknight dinner like roasted chicken. While this is certainly a nod to the classic potato casserole recipes, we add a bit more flavor in the form of cream of chicken soup, butter, sour cream, garlic powder, and sharp cheddar cheese.

Ingredients

  • Diced potatoes – I love using refrigerated hash brown potatoes that are ready to cook as a smart shortcut. They are usually found in the refrigerated section near eggs and dairy. Frozen potatoes will also work, they need to be thawed before using. You can also peel and cut your own potatoes if you prefer. If you use raw potatoes, be sure to account for some extra cooking time. The refrigerated potatoes are partially cooked so they will cook faster.
  • Green onions – The green onions add a mild onion flavor without anything too overpowering for the cheesy potatoes. You could also use chives if you prefer.
  • Chicken soup – We’re using condensed cream of chicken soup so you’ll want to look for that or something similar. You can also use cream of mushroom soup if you can’t find cream of chicken, but I prefer the cream of chicken flavor.
  • Butter – Use high-quality butter for the best flavor.
  • Sour cream – Use high-quality sour cream for the best flavor. Full-fat sour cream is my personal preference but use your favorite type.
  • Spices – Garlic powder, sea salt, black pepper
  • Cheese – Use sharp cheddar for the best flavor. You can use shredded cheeses to save time or shred your own if you prefer. You could also use any cheddar, Colby jack, pepper jack for a little spice, or something like Gruyere or Swiss for a bit of an elevated flavor.

Emily’s Tip

The age of your slow cooker is important! Newer models from the last 10 years cook food much faster than the older models because they cook at a significantly higher temperature. This recipe has been tested with a newer model, so if you’re using an older model, you’ll want to account for some extra cooking time. I did a side-by-side test with a newer model cooking on low heat and an older model cooking on high heat and the newer model was still done faster, despite cooking on low. If using an older model, I would plan on the potatoes taking 6-8 hours on High.

How to Make Crockpot Potatoes

This is an overview, the detailed instructions can be found below in the recipe card.

  1. Prep ingredients. Thaw potatoes if using frozen and drain any excess moisture. Thinly slice green onions. Spray the crockpot bowl with non-stick cooking spray or use a slow cooker liner if desired. (They won’t really stick so it’s optional!)

  1. Mix cheesy potato base. In the slow cooker base, add soup, melted butter, sour cream, garlic powder, sea salt, and black pepper. Whisk together until smooth.
  2. Prep cheesy potatoes. Fold in the diced potatoes, sliced green onions, and sharp cheddar cheese into the soup mixture and stir until combined.

  1. Cook potatoes. Cover with lid and cook crockpot potatoes until fork tender.

FAQs

Can you use fresh potatoes?

Yes, if you prefer to prep your own potatoes, you’ll want to dice them into 1/2-inch cubes. For the best texture, peel before using. To keep the cooking time roughly the same, parboil the potatoes for 5-7 minutes to help speed up the cooking time.

Storage

Store leftovers in an airtight container in the fridge for 2-3 days.

How to reheat

Reheat crockpot cheesy potatoes in a 350-degree F oven or in the microwave until heated through.

Can you freeze party potatoes?

Yes, you can store it in a freezer container and freeze it for 2-3 months. Let thaw before reheating.

What to Serve with Potato Casserole

Here in the Midwest, these potatoes can truly be served with just about everything and you’ll always see them on potluck spreads. It’s a classic for Easter and Thanksgiving meals but can also work for a simple roasted chicken dinner.

Instructions

  1. Prep ingredients:

  • *The cooking times will vary depending on your slow cooker! If you have an older model (about 10+ years) the cooking time will take closer to 6-8 hours on High.
