One thought. I use iron pan to cook Naan base pizza. Take Naan, barely wet one hand and rub wet hand over each side of Naan. Put it in ziplock bag and microwave for short time until nice and soft. Gently roll, not too much, until sort of fits the pan. Leave rolled Naan out to wait.
My playing with this Indian approach is to “marinade” shredded leftover chicken in a little water and curry powder (sorry I cook by eye and not much measuring). Base on Naan is soft good melting cheese mixed with heavily mashed Indian-style chutney with ( I use ricotta, pick your own binder). Drain chicken. Scatter over Naan. I add thin slivers of red pepper, adds visual bling. Topping I use is creme fraiche mixed with some powder ginger and often a little curry powder. In meantime iron pan is heated really hot. Add teeny bit of oil. Slide in assembled pizza. Let Naan base cook for a minute, then into 400+ oven until it looks right, really takes very little time. NB basic cheesy pizza maybe a minute longer than this one. Out, slide onto board, slice, eat !
