brussels sprouts with brown butter

Brown butter always seems to be finding its way into my veggies, and for that, I’m thankful. 🙂

I love brussels sprouts almost anyway they come (except steamed) but when sliced, something magical seems to happen. I’m not sure exactly what it is, but I’m convinced it has the power to convert any non-believers. Try it, you won’t be disappointed.

Simply put? Vegetables this divine deserve a place at every meal.

Shaved Brussels Sprouts with Brown Butter – 4 servings

  • 1 pound brussels sprouts
  • 1 Tbsp olive oil
  • 2 Tbsp butter
  • salt & pepper

Clean brussels sprouts, cut off bottom and thinly slice.

Add butter to small sauce pan and heat over medium until butter browns, about 4-5 minutes, stirring occasionally. Set aside.

Heat olive oil in a large pan. Add brussels sprouts and saute for about 3-5 minutes. Season with salt & pepper.

Drizzle brown butter over brussels sprouts and serve!

    These look great. I have brussels sprouts in my garden that I’ve been waiting to use. I might have to try this. Usually I slice them and saute them with pancetta and craisins – sounds crazy but is delicious!

    I love brussel sprouts and the addition of brown butter makes them so much better. Somehow, even though my bf doesn’t love veggies, he loves brussels so we’ll have to give this a try!

    Browned butter makes pretty much everything taste like magic. I had brown buttered kale for the first time at that picnic operetta thing I volunteered at and – oh my – it was extraordinary.

    I have a big bag of brussels sprouts in my fridge that need to be cooked up. I usually just top mine with some olive oil and spices because my husband doesn’t like butter. I don’t understand how he can’t like butter, I just don’t get it.

    We must be on the same wavelength because I made brussels sprouts with brown butter 2 nights ago! I added a little cinnamon to the brown butter and then tossed the brussels sprouts in it with a few dried cranberries- very fall-like! 🙂
