Sounds decadent, delicious and full of calories, right? Thankfully there is such a thing as healthy french toast. The Sprouted Cinnamon Raisin Bread eliminates refined flours and extra sugars, and the eggs add an additional protein boost that is welcome in any of my breakfasts. It’s custardy and slightly sweet and can be made ahead for a quick and easy breakfast on the go.
Baked French Toast – 4 servings
- 8 slices Sprouted Cinnamon Raisin Bread (I use French Meadow)
- 1 1/2 cup almond milk (I use no sugar, vanilla)
- 1/4 cup maple syrup + extra for drizzling
- 6 eggs
- cinnamon
Cube bread into 1″ pieces and put in 8″ square pan.
Whisk together almond milk, eggs and maple syrup.
Pour egg mixture over bread cubes, sprinkle with cinnamon and let soak for about 3 hours or overnight.
Bake at 375Β° for about 35-40 minutes, until eggs are set.
Cut into 4 pieces, drizzle with maple syrup and serve.
The portion size is huge and there are about 313 calories and 19 grams of protein per serving. Sure to be a filling breakfast and a break from the oatmeal and toast as of late. It makes waking up in the morning that much easier. π

That looks decadent and delicious, I dig. If you reheat is it super mushy? I live alone and would love to make something like that but my fear is I wouldnt be able to get to that. And you could probably pair a piece with some greek yogurt for a little sundae like treat! Speaking of which, let me know when you get your Chobani or if you dont get it by next wk. They said they would send it out after the new year.

It isn’t crispy like normal french toast since it is baked, so it is perfect to make ahead. I made it yesterday and just put it into 4 containers for breakfasts this week.

I love whipping up something like that on the weekend to have and enjoy during the week! The same old breakfast does get, well, old sometimes, doesn’t it? π My favorite breakfast treat is baked oatmeal . . . yum!

You could always add a little cream cheese and brown sugar to get it a little more like stuffed french toast!

Can’t wait to try this. The kids love french toast and this is a perfect option for something that I feel comfortable joining in with eating some. Love the thought of making it on a Monday & being able to re-heat throughout the week.

afghani food is kind of eh. we hade a whole wheat flat bread and hummus for an app. the main dishes were basmatic rice with some sort of daal and meat of daal and veg combination. nothing outstandingly flavorful.

This looks wonderful! My foods class made stratas a while ago but they used milk in them, so I couldn’t eat mine (i’m lactose intolerant.) I was wondering if it would taste weird with almond milk but I think I’ll give this a go π
